This week I decided to surprise my friends with a fabulous and fun breakfast treat.  I cooked eggs inside bacon and let the bacon turn into the serving dish by becoming a bacon cup.  I randomly came up with the idea, didn’t have a recipe or any clue how to cook them, and went ahead and gave it a shot.  I tried 5 different types of flavor profiles for them and each one turned out amazing.  Then again, how can you go wrong with eggs wrapped in bacon cups.  If you love bacon and want to learn how to make bacon cups or eggs cooked in bacon cups, you found the right place.

Ok, this one is amazingly easy and fun to do.  The best part is there is almost no work since you can buy everything pre made.  It is one of my new favorites that is almost impossible to mess up and always amazing to eat.  It is my korean bbq and garlic chicken pizza.  I came up with the recipe for korean bbq and garlic chicken pizza because I had a ton of stuff in my fridge that I had to use and nothing that made sense to make.

What you need to make korean bbq chicken pizza.

  • Pizza dough
  • Korean BBQ sauce (available in almost any grocery store…get the spicy one)
  • 1 clove of garlic chopped
  • Extra virgin olive oil
  • Fine grain sea salt
  • Crushed ground black pepper
  • Buffalo mozzerella sliced
  • Sharp cheddar cheese
  • Grilled chicken breasts

The first thing to do is roll out your pizza dough and spread it across the pizza pan I mentioned above after you set your oven to 350.  Next pour on the extra virgin olive oil, a few splashes of sea salt and pepper, about a tablespoon or two of fresh chopped garlic and pour on about 3 or 4 tablespoons of the korean bbq sauce.  If you want it a bit spicier, add a couple extra tablespoons.  Now take your hand and spread it all over the pizza dough so it hits the edges.  Take the grilled chicken breasts and cut it into slices and lay it out across the sauce.  Now slice your mozzerella balls and place them on the pizza scattered and not covering the whole thing and then take your shredded cheddar cheese and sprinkle it on.  Now place the pizza on the low to middle rack of your oven and bake for 25 minutes.  Take out and let it cool for a few minutes then slice it.  Once it is cool enough to eat you are done.  It’s that easy to make korean bbq chicken pizza and it is always amazing!

Bacon Lobster Pasta:

1 pound of thick sliced bacon
enough of your favorite red pasta sauce (I make my own or buy a basil and garlic one) for 4 people
fresh basil
fresh chopped or minced garlic
red onions (optional)
1 pound of lobster (two large tails or 5 small tails)
1 box of rigatoni or the funny shaped pasta from Mara’s Pasta.

Take your bacon and cut the strips into squares. Cook the squares in a frying pan and once they start to get crispy, pull them out and place the squares on a plate. Keep the bacon fat in the frying pan. Now salt a pot of boiling water and boil your lobster tails until they are cooked. As they are boiling, add your red sauce into your bacon fat and stir it in over low heat. Add in your chopped basil leaves, garlic and red onion and stir it until the sauce and bacon fat mix into each other and you not longer see the bacon fat. Now add the bacon slices back in on low heat.

When the lobster tails have finished cooking, set them aside and let them cool off for a minute. While they are cooling, put your pasta inside the same water you cooked your lobster tails in so you can get them to soak in the flavor from the lobster tails. While the pasta is cooking, cut the lobster tails and cut medium sized pieces of the lobster tail and drop it into the red sauce directly from the main piece so you don’t lose any of the flavors or pieces of lobster. When the pasta is almost all the way cooked, drain it and then add the pasta to the sauce and let it finish cooking in the sauce. Stir it on low heat until the pasta is cooked all the way and you’re done.

sea salt
pepper
chopped garlic

Preheat your oven to 425 and take a baking sheet and cover it with tin foil and spray with a non stick spray or extra virgin olive oil so you don’t ruin your baking or cookie sheet. Rinse off your red potatoes, I use the small ones and cut them into even squares. In a large bowl, pour in a few table spoons of extra virgin olive oil, a tablespoon of paprika, a few pinches of sea salt and black pepper, a few tablespoons of chopped garlic, 2 tablespoons of chopped rosemary and you can throw on some chili powder if you want an extra kick to it.

Mix the potatoes directly in the bowl with the ingredients and when everything is covered, place them on the baking sheet and put them in the oven for 20 minutes or cook them longer if you like them to be crunchy or crispy. Take the potatoes out of the oven and then take the foil and pour the potatoes onto your baking sheet. Let them cool off for a few minutes and then they are ready.

One thing that I love about the fall is pumpkin and pumpkin bread. I also love Thanksgiving because of all of the pumpkin you get to use. Combining things I love like pumpkin, baking and aprons means that I also get to shop for a bunch of fun thanksgiving aprons which are some of the most fun.  You have fun thanksgiving aprons with turkeys talking about cooking turkey, you have fun fall prints like leaves and fall colors like red and yellow.  You also get pilgrim aprons, Indian aprons and even ones that are designer and you can only actually get to wear for the holiday since these thanksgiving aprons are kind of insane and pretty much only appropriate during the holiday.  Below are some random fabulous and fun thanksgiving aprons that you can buy to support this blog and also three things you can do with pumpkin bread to make it even more fun.

Pumpkin bread recipes.

I like to cheat when I make pumpkin bread. I buy the Libby’s pumpkin bread kits that you can find in the grocery stores. It comes with everything you need except for the 4 eggs, the vegetable oil and water. It also only takes a couple of minutes to put the entire mix together so you can save a ton of time and actually get a really good tasting pumpkin bread. They even give you icing so you don’t have to mix powdered sugar and milk together to create one. Here are 3 fun ideas you can do with your pumpkin bread to make it more fun.

1. Change the flavor.

Anyone can make pumpkin bread and it will taste amazing. Here are three ways to change the flavor a bit so that it becomes a bit different and something that only you know how to do. The first thing I do is take 1 tablespoon of cocoa powder and drop it in the bread mix. I then take a teaspoon or less of ancho chili powder to make it spicy. Because pumpkin bread is already thick, you can add in a rich chocolate and spicy kick so it becomes an american version of a Mexican, chocolate flowerless cake. Two other ways to change it are to add in 1 tablespoon of cinnamon sugar per loaf so you get a cinnamon sugar pumpkin bread. When I pull it out of the oven, I sprinkle another layer of cinnamon sugar on top and then use the icing. The last way I change it is to make it more like pumpkin pie by using pumpkin pie spices like ginger and other flavors you have in pumpkin pies.

2. Pumpkin bread muffins

Anyone can make muffins out of pumpkin bread. You pour it into a muffin tin and bake. Here are a couple of things you can do to make your pumpkin muffins more fun. 1. Cut off the top and then hollow out the inside after you cook them. Fill the inside with strawberries and a buttercream icing or cream cheese icing and then use a little bit of icing on the bottom part of the top to make sure it holds onto the muffin again. The second fun thing to do with a pumpkin muffin is to carve a hole through the top and save the top part so you can place it over the hole. Then melt caramel and a small amount of sea salt and pour your salted caramel into the middle of the muffin. This tastes amazing and everyone will love tasting the pumpkin muffin with the salted caramel inside.

3. Pumpkin bread decorating

Everyone thinks of decorating gingerbread, but pumpkin bread is just as fun for you and your kids. All you have to do is bake it on a large and shallow pan and then use cookie cutters to cut out the shapes once the bread is cooked. You can use the left over bread for other recipes and desserts. You can use gingerbread men shapes, stars, candy canes and anything else. Then give your kids frosting, candy and other fun things that they can use to decorate their pumpkin bread cutouts.

I love Thanksgiving because of the fun things you can do in the kitchen and also because of all of the fabulous thanksgiving aprons you can buy. Fall Caramel Apple Recipes

Here are the fabulous and fun ways I have done caramel apples.  I’ll start with how to make the caramel so you can do it and then go with decorating them.  After we know how to decorate I’ll give you some fabulous variations of how to change the taste of the caramel to make it even more fabulous and fun.

Making the Caramel Sauce and dipping your apples:

After you rinse off your apples in warm water to get all of the wax off and remove the stems so you can put the wooden skewers in, fill a microwaveable bowl full of unwrapped caramels.  This is a regular sized soup bowl in the picture.  Then add in two tablespoons of water.  Now put it in the microwave for 1 minute on high heat.  Take it out and stir it with something that the caramel won’t stick to as easily.  You can use a frosting stick, fork, spoon, etc…  Now put it back in the microwave for another 1 or 2 minutes and then stir again.  You may notice the caramel looks like it has dirty water in it…this is normal and as you stir it until it becomes a thick liquid you can dip your apples in like you would expect to see with a caramel apple. Once your caramel is ready to dip your apples in, lay a sheet of wax paper or find a non stick pan to place your apples on.

Take one apple and dip it into the caramel sauce.  Hold it over the bowl and let the caramel drip off of it until the dripping slows to every 10 or 15 seconds.  I pulled the excess off with a spoon.  Now you are ready to decorate the apple you dipped.

Pumpkin caramel apples:

This one is fun.  Place orange M&Ms or M&M minis on a plate and roll your caramel apple through it.  Now you have a fun caramel apple that looks like a pumpkin.  You can also color the stick green.

Candycorn apples:

One that I love is to roll it through candy corns.  It looks very fall and festive.

Leaves:

If you have chocolates that are shaped like leaves, you can place them around the apples by hand and then fill in the excess space with red, yellow and other fall color M&Ms to decorate the apples.

Pumpkin Caramel Apples:

One way to change the flavor and make your caramel apples more fun for the fall is to add in a bit of pumpkin spice and other fall flavors.  Mix it into the caramel as you’re spinning and make sure to take a small taste, but don’t burn your mouth.  These can taste awesome if you do it right.

Salted caramel chocolate apple:

Take 1/4 teaspoon of sea salt and mix it into the caramel.  Then once you have it on, roll it in chocolate or use a double boiler to melt chocolate and dip the caramel apple a second time.  This one is amazing.
