Best Ever Banana Bread Muffins

What do you do with that bunch of bananas that you just bought and have already begun to over-ripen before you’ve had a chance to eat them? Make amazingly crowd pleasing banana bread muffins of course!

These muffins combines the sweetness of a bananas and the fluffiness of bread to create a tasty and moist flavor bomb that will leave you wanting more and more. Fortunately this recipe yields 18 muffins so there’ll be plenty to share or freeze and hoard for yourself.

The secret ingredient here is the buttermilk. Buttermilk works it’s magic to transform this recipe from dense and overly sweet to a moist, fluffy, and light addition to the day. Have it for breakfast with a cup of coffee or tea, as a midday snack, or as a side with your meal. You can even have it as a special treat at the end of the day.

Ingredients

  • 1 cup butter softened
  • 3 cups sugar
  • 4 large eggs
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 cup buttermilk
  • 5 - 6 large over ripened bananas mashed
  • 4 cups flour

Instructions

  1. Preheat the oven to 350 degrees

  2. Using a stand or hand mixer, combine the softened butter and sugar.

  3. Mix in 1 egg at a time, then add the baking soda and salt.

  4. Slowly mix in the buttermilk.

  5. Add the bananas. 

  6. Gradually mix in the flour, one cup at a time. 

  7. Fill your greased or lined muffin tins. 

  8. Bake for 30 - 40 minutes or until golden brown. 

  9. Unwrap and enjoy!

Ingredients

Gingerbread French Toast

  • 3 - 6 slices gingerbread cut thick
  • 3 large eggs beat them with a fork
  • 1/4 cup granulated sugar
  • 1 - 2 tbsp vanilla extract
  • 1 tbsp ground cinnamon

Cinnamon Vanilla Whipped Cream

  • 1 cup whipping cream light or heavy
  • 1 - 2 tbsp vanilla extract go with your taste
  • 1 tbsp ground cinnamon
  • 1 slice bacon crispy and crumbled

Instructions

Make Your Gingerbread French Toast

  1. The first thing to do is spray a pan with non stick cooking spray. Now set up your dredging stations. Turn the stove up to medium heat and mix all of the wet ingredients together.

  2. Once your frying pan is hot, dip the gingerbread in on both side and place on the frying pan. Let these cook for about 3 to 5 minutes on each side and then remove and put them on a plate.

Make Cinnamon, Vanilla Whipped Cream

  1. While they are cooking on the first side, make your whipped cream. Add the cinnamon, vanilla and whipping cream to your stand mixer (or you can whip it by hand if you don't have one).  

    If you want to add bacon to it, add it on the next step, but make sure it is crumbled so you don't get big chunks that aren't as appealing. Bigger chunks is great for frosting, but not whipped cream.

  2. Once it is at a whipped topping consistency, add in 1/4 to 1/3 cup of white sugar and then whip it more until it is thick enough to stand on it's own and up to warm gingerbread. Now place it on top of the gingerbread french toast or place it in a bowl and let people serve themselves.

Recipe Notes

You can modify this anyway you'd like.  Cinnamon sugar instead of cinnamon to make it sweeter.  Nutmeg or pumpkin spice can be fun and most chili powders taste awesome with these ingredients.

Easy Honey, Prosciutto & Gruyere Croissant Recipe

I had a random idea for a fun breakfast recipe that takes almost no time and is almost 100% fool proof.  It’s a honey, prosciutto & Gruyere croissant.  There are two modifications you can make to this.  The first is to add almonds for crunch which I did in this one and the second one is to add cayenne pepper powder to the honey to add some spice.  Both taste amazing and are easy to do.

BBQ Bacon Croissant Roll Ups Recipe

BBQ Bacon Croissant Rollups Recipe.

What you need:

  • 1 package of premade croissant dough
  • 1 lb. of bacon
  • Your favorite bbq sauce
  • Your favorite cheese shreds
  • 1 non stick cookie sheet

Pre-heat your oven to 350 degrees or whatever it says on your premade croissant dough.  Take your non stick cookie sheet and unroll your dough into triangles.  Now take bbq sauce and pour some on the dough and spread across it.  Now take a slice of bacon and cut it into two piece with one piece about one third of the slice.  Take the longer piece and line it along the long part of the dough.  Take the smaller piece of bacon and place it across the top.  Now toss some of the cheese shreds inside and then roll them into croissants.  Now add a bit more cheese on top and bake until the dough and the bacon are both cooked thoroughly.  Raw bacon is not healthy or safe to eat.  You can always cook it a bit before adding it to your dough if you want to make sure it is thoroughly cooked.  Now let them cool and serve.

Stained Glass Wasabi Deviled Eggs Recipe for Easter

I know I haven’t posted here in a while and I apologize.  I have been insanely busy, but I did think of a quick fun and easy recipe perfect for Easter.  It’s a stained glass wasabi deviled egg.  You can do any type of deviled egg you’d like to be honest, but I like spicy and decided to do a simple mix of the hardboiled egg yolks, mayo, wasabi and a bit of horseradish and they are amazing!  Before I share the recipe on how to make these fun and kid friendly stained glass eggs, here are two aprons that I think perfectly compliment them.  Remember, this site is supporting by you shopping through the image links within the post.  If you like the aprons below click through and find dozens more including matching mother and daughter ones…but don’t use a coupon or I don’t get credit for the sale.  The sales help pay for the site and let me bring you new recipes.

How to make stained glass eggs

Making stained glass eggs is a fun way to bond with your kids and get them to eat healthy.  They are colorful, fun to make and even more fun for adults when you turn them into stained glass wasabi deviled eggs.  Here is how to make stained glass eggs and my wasabi deviled eggs recipe.

  • hardboiled eggs
  • food coloring
  • cups, bowls or ramikins
  • mayonaise
  • wasabi
  • horseradish

Quick note, if you find a wasabi mayo you can use that, or a wasabi mustard (if you like mustard.  You can also use a wasabi horseradish sauce and go lighter on the mayo.)

Take your hardboiled eggs and crack the shells.  Place the cracked shelled eggs inside your containers with the food coloring in them.  Let everything soak for about 10 minutes and then take them out and peel off the shells.  Now slice the stained glass eggs in half and take out the yolk.  Place the yolks in a bowl with mayo, horseradish and wasabi and mix them together until it looks like egg salad.  Now scoop or pipe the mixture into the stained glass eggs and you now have a fun stained glass wasabi deviled egg.  It’s an easy and fun way to impress house guests, to get your kids to eat eggs and just fun to do for Easter.
