This week I decided to surprise my friends with a fabulous and fun breakfast treat.  I cooked eggs inside bacon and let the bacon turn into the serving dish by becoming a bacon cup.  I randomly came up with the idea, didn’t have a recipe or any clue how to cook them, and went ahead and gave it a shot.  I tried 5 different types of flavor profiles for them and each one turned out amazing.  Then again, how can you go wrong with eggs wrapped in bacon cups.  If you love bacon and want to learn how to make bacon cups or eggs cooked in bacon cups, you found the right place.

How to make 3D star shaped eggs.

Making 3D star shaped eggs is super fun and super easy.  You’ll need about 3 eggs per person and your favorite things to go inside.  You basically need to think about what you would put in an omelet.  Instead of cooking the eggs, laying everything inside and stuffing it with cheese, then flipping it over.  You scramble it all together and as it is cooking feed it into the star shaped cookie cutters (click this link to buy them).  Here are 3 different ways to do it including my favorite, the 3D star shaped spicy Mexican taco eggs.

1.  New Years Eggs – New years is all about white for snow and blue for new so why not have a 3D star shaped egg recipe perfect to start out a new year.  Take a few strips of bacon or use pre cooked bacon and cook it to how you like it.  Now mix it into your egg whites and start scrambling them.  Once they start to cook, pick them up and place them into the star shaped cookie cutters and push down hard so that they stay in place.

2.  Spicy 3D star shaped eggs recipe for Cinco de Mayo or taco eggs.  The first thing to do is crack three large eggs and place them in a bowl.  throw in a pinch of salt and some pepper, about a half teaspoon to a full teaspoon of chili powder and mix them together.  Now chop 1/4 of a red onion and a tablespoon of chopped garlic.  Take some extra virgin olive oil in a pan and pour in the garlic and onions.  Once they are cooking add your egg mixture.  Now when it starts to cook pick up the pieces and place it into the star shaped cookie cutters.  Now pack the eggs in and let them finish cooking.  Now serve with chedder cheese and salsa or without them.  They taste awesome either way and your kids will love these 3D star shaped eggs.

3.  This one is fun for cobb salads, bim bim bop bowls or any dish that uses eggs.   All you need to do is take your cookie cutter and make sure it is secure against the bottom of the pan.  Now pour in a little bit of extra virgin olive oil and pour the egg whites or entire egg inside.  You may want to do two or three to fill up the cookie cutter.  Cover the eggs in the star shaped cookie cutters so you have heat from all angles and when it’s done cooking you can push the 3D star shaped eggs out of the cookie cutter and serve on top of anything for a cool looking and great tasting egg with your food.

How to cook an egg in an avocado recipe.

These are super easy and fun to make.  Here is the basic way to do it and then 5 different types that I make and love.

What you need to cook eggs in an avocado.

  • 1 avocado (per person if you eat a lot)
  • sea salt
  • black pepper
  • large or extra large eggs

Optional:

  • Three cheese blend
  • Garlic
  • Bacon
  • Chili powder
  • Scallions
  • Salsa
  • Cream cheeseake

Ok, the first thing to do is preheat your oven to 400 degrees.  Now cut your avocado in half and do not take the shell off.  Take a small spoon and scoop out a little bit of the inside where the seed was so that you can get the egg to stay put.  (It’s ok if the egg runs over the top and onto the cooking sheet when you pour it in).  Now throw a dash of sea salt and a dash of ground black pepper on the avocado and in the base you combine your flavors.  My personal favorite is a little bit of chopped garlic and bacon bits.  Now crack and pour one large or extra large egg into the center of the avocado after placing it on a baking sheet.  Place the avocados in the oven at 400 degrees for 20 minutes on the middle shelf.  This is the perfect time for my oven, but you’ll need to work on your own.  When altering the recipe, put the flavors into the avocado before you add the egg.  That’s the trick.

Here are 5 ways and recipes to cook an egg in an avocado using the instructions above.

  1. Garlic and bacon bits with chili powder on top.
  2. Chili powder and a three cheese blend on top before it goes into the oven.
  3. Sea salt and black pepper.
  4. Cream cheese and salsa served on the side of any of the above.
  5. Cream cheese and chives below the egg.  (You’ll need to scoop a bit more out of the avocado for this one).

How to make a blue cheese and horseradish filet recipe

This is one of the most fun and easy recipes that I have created recently.  It only takes a few ingredients and not much prep time.  All you have to do is have a container like the one below and a lid to store it in the fridge for 24 hours (this isn’t necessary but I do it so the flavors can sink in.).

What you need to make a blue cheese and horseradish crusted filet steak.

  • 1 or 2 filets
  • Extra virgin olive oil
  • Sea salt
  • Crushed black pepper
  • Crumbled blue cheese
  • Prepared horseradish
  • Chopped garlic

The first thing to do is to pour extra virgin olive oil into a container and throw a few pinches of sea salt and pepper into it.  Now place the steaks inside the container and sprinkle some sea salt and pepper on the top of the steaks too.  In the next container mix a bunch of crumbled blue cheese, a few scoops of fresh prepared horseradish and about two tablespoons of crushed garlic and mix it all together.  Now take the steaks and place them in the container with the cheese mixture.  You can crust the cheese to the side or place it and stick it on the top of the steaks.  Now cover and set in the fridge for about 24 hours.  Take the steaks out and place them on a baking sheet in the oven at 350 degrees for about 20 to 25 minutes and they’re done.  Let cool and serve and you now have an amazing bluecheese and horseradish crusted steak.  Thank you all again for reading and please buy an apron without using a coupon code to help support this blog.  I don’t get paid unless you click my link and do not use a coupon.  =0)

Cooking eggs inside bell peppers is one of the most fun ways to prepare eggs.  The nice this is that the bell peppers hold the eggs in a mold and it is almost a fool proof recipe that makes everyone smile.  Here’s the trick on making them stuffed and to make sure they look fabulous.

  1. Slick your bell peppers into thick or thin slices.
  2. Make sure you do not keep the bottom on the bottom slice.
  3. Lay the peppers on a non stick frying pan.
  4. Place garlic, bacon, chives or anything else you want to have inside the eggs in the middle of the pepper slice.
  5. Pour the eggs into the pepper and make sure they fill it up.  If the pepper is to large, add a second egg.
  6. If you want the puffy fun look like I had, cover the eggs so the steam cooks the top part while the frying pan cooks the lower part.
  7. Sprinkle on cayenne, chili or whatever other peppers you want on top and you are now done.

Take the sliced with a spatula and lay them neatly on your plate.  This recipe is very fun, easy and always looks great when you do it the right way.  They are also easy to add flavors to by add the flavor below the eggs in the middle of the pepper so your guests get a fun surprise as they are eating.

Beer Battered Avacdo and Sesame, Garlic and Teriyaki Chicken Recipe

Ok, now that you’ve seen two sample aprons to wear with this fun recipe for an easy to cook and quick meal, here are the recipes for the fried avocado and the sesame, garlic and teriyaki chicken.

Beer batter and fried avocado recipe.

  • 2 avocados (keep them in the fridge for a day or two)
  • 1 and 1/4 cup of white flour
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 large egg
  • 1 bottle of irish red beer
  • Extra virgin olive oil

This recipe for fried avocados is insanely easy.  combine the flour with the salt and pepper and egg and about 3/4 of the bottle of beer into a bowl until it looks like a very thick pancake batter.  Now slice the avocado into slices after taking out the pit and the skin.  Dip the slices of avocado and cover them in the batter and then carefully place them into the frying pan that has extra virgin olive oil in it.  Once the batter is cooked and looks like the color below, it is done and you can pull it out.  Serve by itself or with whatever sauce you want.  I used the sauce from the next recipe.

Garlic, sesame and teriyaki chicken recipe.

  • 3 chicken breasts
  • Sesame seeds
  • 1 bottle of teriyaki sauce
  • chopped garlic (add as much to the chicken as you’d like)
  • extra virgin olive oil

Heat up a pan and pour in enough extra virgin olive oil to cover the bottoms of the chicken breasts.  Now place the chicken breasts into the oil and then carefully take a knife and slice the breasts while not burning yourself or cutting your frying pans so that the slices go almost to the bottom of the chicken and you create easy to rip apart pieces.  Now take the chopped garlic and using something like a large wooden fork or spoon, push it into the sliced of chicken so it soaks in.  Now cover the frying pan and let it cook on medium heat until the chicken is thoroughly cooked.  Place the chicken breasts on a plate and throw the sesame seeds over the chicken.  Now pour the teriyaki sauce on it and you’re done.

Peach and Pancetta Pizza Recipe and Floral Napa Wine Aprons

Peach and Pancetta Pizza recipe.

The way I came up with this recipe is by combining my favorite late summer flavors, and because I really wanted to go to wine country for Labor Day weekend but everything was booked.  Instead of getting upset about it, I decided to pair my own unique wine country flavors with wines and have my own mini vacation like I was in wine country, but at my apartment.  The white peach flesh and pancetta pizza came out perfect and I’ll include some options for you to make it so that you will love it and add your own twist.

What you need to make a white peach and pancetta pizza recipe.

  • Fresh whole wheat pizza dough
  • Extra virgin olive oil
  • Sea salt
  • Ground black pepper
  • Boars head or other diced pancetta
  • 1 or 2 large white flesh peaches
  • California figs
  • Balsamic glaze (raspberry, apple, cantalope or your other favorite citrus)
  • 1 large ball of sliced buffalo mozzerella
  • Parmesan or asiago cheese shreds

Preheat your oven to 350 degrees and then start rolling out your whole wheat pizza dough to the size you want it.  Take two tablespoons of extra virgin olive oil and pour it into the middle of the crust.  Now throw on a pinch of sea salt and a pinch of ground black pepper and push the liquid to the edges of the crust.  Now take about 4 tablespoons of your favorite sweet balsamic glaze and pour it into the center of the crust.  Rub it around the crust so that it comes almost to the edges.  If you need more than 4 tablespoons, feel free to add it on.  Now take your sliced buffalo mozzarella and lay it out across the pizza in slices.  Next take your white peaches and slice them in half so you can take the pit out.  Take each half and cut it into thin slices.  Now cut your California figs into quarters or into eigths and place them around the pizza on top of the mozzarella slices.  The last step is to take the diced pancetta and toss it over the pizza and then sprinkle the cheese shreds and place the pizza in the oven for about 15 minutes.  Once everything is melted you can turn your oven to broil and move the pizza to the top rack to brown the cheese.  Slice the pizza and let it cool.  Now serve it and enjoy with your favorite wine or if you are serving it to people under 21, try it with juice.  Thank you again for reading and please shop through the links without using a coupon to help support the blog and also feel free to leave a comment or share this post on pinterest, facebook or your other favorite social site.

This is one of the easiest and most amazing sandwiches you can make.  You can also serve it as a dinner or any other way you want.  Normally I cut the chicken straight through into pieces and then pile it on the bun when I serve it as a sandwich, but because I wanted to show you what it looks like with the breast in tact for dinner I placed the breasts sliced on the buns.  If you do make a garlic aioli or mayo, you can place it on the bun.

What you need:

  • 1 Avocado
  • 2 Chicken Breasts
  • 1 Vine ripened tomatoe (small works great)
  • Basil
  • Extra virgin olive oil
  • Sea salt
  • Black pepper
  • A few cloves of garlic

Take your extra virgin olive oil and pour some in a pan.  Now take your chicken breasts and lay them in the olive oil so just the bottom of the breasts are covered.  Take a pinch of salt and throw it over each breast.  Now throw a pinch of pepper on each breast.  Next take a sharp knife and slice the breasts almost down to the bottom.  Let this start to cook on medium heat.

Now puree or chop your basil and mince or chop your garlic and mix them together.  take this combination and carefully rub it on the chicken breast and try to push it into the slices so everything has a ton of flavor.  Now cover the pan with a lid and let it cook.  While the chicken is cooking, slice a tomato, scoop out your avocado and slice it.  Arrange the avocado and tomato on a plate or place them on the top part of the bun or bread you are serving the chicken on.  When the chicken is done cooking, either place it on the bread or slice it through the rest of the way on a cutting board and line it up on the bread so it is easier to eat.  Place the avocado and tomato on it and serve.

Here’s my recipe for my twice baked and cheese stuffed red potatoes.

  • 5lbs of baby red potatoes – or however much you will need.  Remember, you are splitting them in two so one potatoe equals two servings or two potatoes.
  • 1 pint of low fat or fat free sour cream
  • 1 lb of shreddef mild or sharp chedder cheese
  • 1 thing of fresh chives
  • Aluminum foil
  • Whatever else you want to throw into the potatoes

First pre-heat your oven to 425 degrees.  Take your potatoes and rinse them off then poke holes in it with a fork on the top and bottom of the potato.  Now take each potato and wrap them aluminum foil and place them on a baking sheet with ridges so they don’t slide off.  Let them bake in the oven for about an hour or an hour and 20 minutes.  Now take them out and unwrap them one at a time.

Place a potatoe on a cutting board and slice it in half so that both of the halves can lay on their own.  Now take a spoon and scoop out the inside so you get something that looks like a potato skin.  Take the insides and place them in a mixing bowl or something you can mash them with.  (I usually make an extra potatoe and mash it so I have extra filling).  Once you have all of the potatoes scooped, add in about half of the sour cream (you can add more if you need to later), chop your chives and throw them in.  Add in some chedder cheese and anything else you want to put into your potatoes.  Now mash all of it together so that you get a thick mashed potato type of filling.  Now take a spoon and scoop the mixture into the potato skins.  Once you have all of them filled on the cookie sheet, cover the tops in more chedder cheese.  Bake for another 20 minutes or until the cheese melts and starts to brown on top.  Now take them out of the oven and you have amazing cheese stuffed twice baked potatoes.  Don’t forget to come back and share what you thought of this recipe and also buy one of the vintage pink aprons for women or styles of aprons without using a coupon code so that I can keep bringing you new recipes to share.

5 fun and easy polenta recipes and my fabublous polenta bruschetta.

Lets start with the ways to prepare and how to cook polenta.  You can slice it into discs and then fry it until it turns golden brown, bake it until it starts to firm up or grill it until it is hot and starts to firm.  You can also fry it until it’s golden brown and firm and then bake it to knock some of the grease out or grill it after.  That’s what I love to do.  Here’s how to make polenta bruschetta and then 5 other styles of dishes with the same ingredients.

What you will need:

  • Polenta (tubed is preferred)
  • Basil leaves
  • Kumata or Roma tomatoes
  • Garlic (if you want it)
  • Sundried tomatoes (if you don’t want to use regular tomatoes)
  • Parmesan shreds
  • Vegetable oil

How to make polenta bruschetta.  Take a frying pan and pour in vegetable oil so that the discs can float but the oil won’t overflow the frying pan and heat your oven to 350 degrees.  Now slice the polenta as thick or thin as you’d like.  Don’t try and make it to thin or it will tear and break and not be able to support anything.  Once your polenta is a golden color, place it on a baking sheet and let it cool off.  While your polenta slices are cooling off, chop your tomatoes and your basil leaves and then mix them together.  You can add chopped garlic to the mixture as well for extra flavor.  Now sprinkle on parmesan cheese or a three cheese shred blend if you want to and then place it on top of the polenta slices.  Only do this if you want hot bruschetta, if you want it cold, put the basil leaves, tomatoes and garlic in a bowl in your refrigerator so it stays cold.  Now place the baking sheet with or without the bruschetta on top of it for about 10 to 15 minutes until the grease is removed and it is a bit more golden brown or firm.  Now take it out and plate the polenta slices.  If you want cold bruschetta, place it on top of the slices and you’re done.  To create the other dishes in the pictures, just play with the different ingredients above and you can stack them, bake them or just place them sliced, whole, chopped, etc…   The fun thing about this is that each one will taste almost 100% unique from each other depending on how you play with the ingredients.  Figure out which one you like the most and have fun.  None of them are hard to prepare and each of them cook the same way as above.  Also, don’t forget to click through the links and buy an apron or something from the store without using a coupon to help support this blog.

Easy to make cheese stuffed mushrooms recipe.

  • White button mushrooms with stems
  • Cream cheese (fat free, low fat or regular all work)
  • Shredded Parmesan or a three cheese blend
  • Panko bread crumbs
  • Cayenne pepper powder

Preheat your oven to 350.  First wash off or clean the mushrooms the way you like and remove the stems.  Place the stems aside.  Lay the mushroom caps upside down so the cavity where the stems were is facing up.  Now take the mushroom stems and dice them or chop them into chunks or pieces.  They should be big enough to be able to be bitten into and people will know what they are, but small enough to blend into the mixture.  Now place the cream cheese, I use half of the package for about 9 mushroom and the whole thing for more (it depends how stuffed you want your mushrooms) with the breadcrumbs (I usually just keep adding to find a texture that I like) and cover the cream cheese in cayanne pepper until it is spicy enough for you.  Now throw in a few pinches of the shredded cheese and mix everything together.  Once it is mixed together, take it out and stuff your mushrooms.  Once you have them stuffed as much as you’d like, throw a bunch of the shredded cheese on top of them and place them in the oven for about 10 to 20 minutes.  Check after ten minutes and if the cheese is melted you can take them out. To get the brown color on top of the cheese, move the baking sheet up to the top rack and turn your oven on broil.  Leave the mushrooms in there for about two or three minutes and the cheese should start browning to give it an awesome color and look.

Ok, here’s the recipe for my sundried tomato and Gorgonzola polenta.

  • 1 package of polenta (I buy the premade that comes in the plastic wrap so I can just slice it.
  • Sundried tomatoes
  • Gorgonzola cheese (I buy the wedge of it instead of crumbled but both work).
  • shredded Parmesan cheese
  • extra virgin olive oil

All you do is line a pan with wax paper, or you pour extra virgin olive oil on it (however your polenta will start out soggy but that goes away when you let it rest after the oven outside of the pan) and heat your oven to 350.  Now slice your polenta or bunch it up into bites with your thumb pushing it into a cup shape if you are doing bites for an appetizer.  Take your sundried tomatoes and chop them and mix them into the polenta.  If you are doing slices, you can julienne them and lay them across the slices.

Now take your Gorgonzola cheese and break of small chunks and either place them in the thumb prints or on top of the slices.  I usually place them in the middle because it melts across the slice.  Now take these and place them in the oven on the top rack for about 20 minutes.

After twenty minutes, take the polenta out and check the consistency.  If it is able to be easily picked up and almost done, cover them with the Parmesan cheese and then put them back in the oven for a few minutes on the top rack and then turn the oven to broil so you can brown and crisp the cheese for about 5 minutes (until the cheese starts to brown).  Now take everything out of the oven and serve.

My sundried tomatoe and gorgonzola polenta is an awesome appetizer and also a fun side dish you can serve.  Everyone will love them and you’ll love serving them in your new red tomato aprons.  I love having a theme and when I am serving dinner, I always like to have a matching outfit and things like these red tomato aprons are one of the first ways you can start to bring your theme together.
