Shredded Enchilada Chicken (Crockpot Recipe)

Since Mexican food is a favorite of mine, I’ve created and perfected, in my humble opinion, this version of enchilada chicken. It is creamy, juicy, cheesey, and full of flavor. The best part is that it’s so simple to make and it’s so versatile that it can be used in a variety of meals from tacos to burritos to Mexi-bowls. This is also a potluck crowd pleaser!

Something magical happens to chicken as it cooks low and slow in a crockpot. It soaks up sauces and stays moist from it’s own juices. My favorite part is that the beautifully flavored and tender chicken begins to fall apart all on it’s own. This shredded enchilada chicken is a great dish that tastes like your Abuela slaved over a hot stove all day. When in fact all you have to do is toss some ingredients into a crockpot and leave it to do all of the work while you take all of the credit.

Shredded Enchilada Chicken (Crockpot Recipe)

Turn up your typical taco night with this super tasty Mexi-Cali version of enchilada chicken. This shredded chicken can be used in tacos, burritos, Mexi-bowls, and more. It's so full of flavor that you won't believe how simple it is to make.

  • 2 lbs skinless boneless chicken tenderloins can substitute with chicken breasts
  • 2 Tbsp taco seasoning
  • 1/2 cup enchilada verde sauce
  • 1 cup cheddar cheese shredded
  • 1 cup pepper jack cheese shredded (can substitute with 1 addition cup of cheddar)
  • 8 oz cream cheese softened
  • your favorite add-ins rice, tortillas, avocado, lime, cilantro, sour cream, salsa...


  • Set your crockpot to the low setting
  • Add your taco seasoning to the crockpot and then slowly add in the enchilada sauce while mixing it into the taco seasoning. You want to get a wet thick paste consistency that's not watery, so add as much or as little sauce as you need to get the right thickness. 
  • Stir the chicken into the seasoning and sauce mixture. (The chicken doesn't need to be evenly coated) Cover and let cook for 4 hours (6 hours if you're starting with frozen chicken)
  • While the chicken is cooking, shred your cheeses and set them aside for later.  
  • In the last 15 minutes of cooking, pull out the chicken and shred. The chicken should be falling apart and easy to shred. I usually just use tongs and a fork. 
  • Put the chicken back into the crockpot and stir in the softened cream cheese. Let cook for 10 minutes or until cream cheese is fully melted and incorporated. 
  • Stir in the shredded cheeses until all of the cheese is fully melted.
  • Then serve it any way you like it, in tacos, on top of rice, on a spoon...
    My husband loves to pile it into a burrito with some extra cheese, fresh salsa, and sour cream. 
  • I love it on top of avocado with fresh salsa and sour cream for a tasty low-carb friendly Mexi-bowl. 

Crockpot Creamy Roasted Tomato and Basil Soup

Soup has always been my comfort food and being Italian, tomato soup one of my favorites. I’ve tried for years to make a soup that my great grandma would be proud of and this is it! It has a classically rustic Italian flavor that warms and fills the belly just like Italian food should.

This soup has a slight sweetness from the roasted tomatoes that plays well will the herbaceous fresh basil. The creaminess gives it a beautiful texture that makes it a thick and hearty soup that is perfect as an entree or pair it with a salad for a light meal.

Creamy Roasted Tomato and Basil Soup

This creamy smooth version of a classic tomato soup is bursting with flavor. The roasted tomatoes and fresh basil make it a treat for the senses.

  • 10-12 medium tomatoes chopped
  • 1 medium yellow onion chopped
  • 1 large bunch fresh basil finely diced
  • 2 cans diced tomatoes do not drain
  • 2 Tbsp tomato paste
  • 1 cup chicken stock or broth
  • 1 cup heavy cream
  • 2 1/2 Tbsp brown sugar I used a low carb sugar blend
  • 1/2 tsp all spice
  • salt and pepper to taste


  • 5 quart crockpot
  • 1 immersion blender


  • Preheat oven at 450 degrees 
    Chop tomatoes, onions, and basil. Set the basil aside for later. 

Roasting the Tomatoes and Onions

  • Spread tomatoes and onions on a large foil covered cookie sheet
  • Sprinkle with salt to taste 
  • Sprinkle the brown sugar evenly over the tomatoes and onions
  • Roast for 20 minutes until tomatoes and onions are soft to the touch 
  • Pour the roasted tomatoes and onions into a bowl with as much of the juice as possible 

Making the Soup

  • While the tomatoes are roasting, set your crockpot on the low setting
    You can cook on high but low and slow is my favorite way to crockpot 
  • Add canned tomatoes (with the liquid), tomato paste, and all-spice to the crockpot 
  • Stir in the roasted tomatoes and onions with their juice
  • Stir in the chicken stock or broth 
  • Let cook for 4 hours on low or 2 hours on high 
  • Here comes the fun part
    Blend everything in the crockpot with the immersion blender until smooth
  • Slowly stir in the heavy cream
  • Stir in the basil
    You could also put the basil in before you blend for a completely creamy feel
  • Cook on low for an additional 30 minutes or until the cream is fully incorporated
  • Season with salt and pepper to taste
  • Serve and enjoy
    This recipe makes 8 servings because I love leftovers 


Some tasty things that you might like to go with this soup are a toasted bread of your choice or chips made from cheese as a low carb option
You can make cheese chips in the oven by placing shredded cheese on a greased cookie sheet and cooking at 350 degrees until the cheese starts to brown slightly and let cool, they'll crisp up as they cool. Or you can make them in the microwave on a microwave safe plate and cooking at 30 seconds at a time until they begin to brown and then let cool. 
Parmesan and cheddar cheeses are my favorites but if you intend to use Parmesan you should cut back on the salt in the soup.  

One of my favorite parts of this recipe is getting to use my immersion blender. If you don’t have one, I highly recommend getting one. You can use a traditional blender, but it will make for extra work.

This recipe was created with the intention to have leftovers so it can be cut in half if you desire.

Mini Fruit Pies – Perfect for Picnics & Parties

So making fruit pies scares me.  Getting the pie crusts to sit perfectly in the tin is a nightmare!  Yes, I admit it, I hate it, hate it, hate it…but that doesn’t stop me from trying over and over.  With that said, I discovered something magic that makes it the easiest thing in the world.  Mini pies.

Instead of trying to lay a perfect pie crust, you can use a basic cupcake sheet and simply push the crusts down.  Even if they fold, aren’t perfect, etc… it doesn’t matter.  The pies come out looking perfect and you can go as thick and somewhat thin as you want.  It’s a perfect serving size, delicious, easy to make and super fun!  Here’s my recipe for making mini pies in multiple flavors.

Romantic Valentine’s Day Meringue Cookies Recipe

So I saw that meringue cookies only have roughly 30-35 calories (you’ll have to fact check yourself).  I had never made meringue before, but I was inspired and had an idea to make a really cool assortment of Valentine’s themed meringue cookies.  The first batch I tried to make was a serious failure, but the reason is that I didn’t know to keep blending the ingredients more.  I stopped when it was almost at soft peaks and gave up.  Don’t let this happen to you.  The end result is absolutely worth it!

Anyways, valentine’s meringue cookies are super fun, cute and really easy.  It’s a bit boring waiting for the egg whites to turn into meringue, but the payoff is worth it.  Below you’ll find step by step instructions as well as pictures for exactly what they should look like each step of the way.  If you get creative, you could make meringue cookies for any holiday like Christmas, Hanukah, Easter and others.

Red Pepper, Onion and Garlic Chicken Recipe

Now we’ll get to what you’ve been waiting for.  My new diet friendly red pepper, onion and garlic chicken recipe.  To make this fun and fabulous dish, you will only need a few things.

  • Extra Virgin Olive Oil
  • Two Chicken Breasts
  • Sea Salt and Pepper (optional)
  • Crushed Garlic
  • 1/2 of a small chopped red onion
  • Julienne and then sliced horizontally red peppers.

Take a large frying pan with a cover and pour in some of the extra virgin olive oil.  You don’t need a lot.  Chop your red onion and combine it with your crushed and chopped garlic and throw it into the olive oil.  Now throw in your chicken breasts and throw on a small splash of sea salt and pepper.  Next toss in your red pepper rectangles and cover the pan.  Let everything sit on high for about 10 minutes or until the chicken is cooked thoroughly, flip the breasts over to brown them again real quick on the other side and carefully plate it all.

This is one of the easiest things to make.  The first thing to do is to cook bacon into strips.  Now cook your eggs.  You can do three sunnyside up (eating raw or under cooked foods can be very dangerous so do this at your own risk) or scrambled.  Now, create the diamond shape (you can break and lay the pieces out or wrap the edges of the bacon together so that they cook and stick in this shape.  You do have to be careful they don’t shrink as much and come apart so it can be tricky.  Next cook your eggs.

If you do scrambled you are good to go.  Just put the scrambled eggs inside the diamond.  If you go sunnyside up, try to make them inside a smaller frying pan that is about the same size as the inside of the diamond.  Now take the sunnyside up eggs and place them inside the diamond.  Now create the S out of pieces of bacon or wrap pieces together so that when you cook them they will cook in an S.  Bacon shrinks so you want to make sure it starts out large enough so it can cover the diamond and not break apart.  Now if you did sunnyside up, break the yolks and the yellow should fill in underneath the bacon creating a cook looking emblem.  If you used scrambled then you just need to fill in the gaps.  Now you can outline the bacon in hot sauce or ketchup if you want more of a line and you are ready to serve a breakfast fit for a superhero.
