A few weeks ago we had pride here in Washington DC so I figured what better way to celebrate my gay friends than by making a giant 8″ rainbow rice crispy treat cake with a Kahlua drizzle on top.  Not only was it delicious and amazing, but it was fun and easy to make.  Before you try to make the rainbow rice crispy treats cake though, I do have a warning for you so that it doesn’t fall apart when you try to cut it so make sure you read the recipe.

How to Make Rainbow Rice Crispy Treats Cake with Kahlua Icing

This recipe is fun and easy, but it does take a decent amount of prep work.

What you need to make rainbow rice crispy treats cakes.

  • 4 large boxes of rice crispy cereal treats
  • 5 large bags of marshmallows
  • 1 tub of butter
  • Red, Yellow and Blue food coloring
  • Kahlua or Milk for a non alcoholic frosting
  • Powdered sugar
  • 1 cake sheet about 2 to 4 inches deep

rainbow rice crispy treats cakeQuick note, make red and orange first with red on the bottom.  Next do yellow and green and then stack orange and yellow together.  Do blue and stack blue and green together.  Red and Yellow make Orange, Yellow and Blue make Green and Red and Blue make Purple if you need a quick reminder.

The first thing to do is to start making rice crispy treats like you normally would by melting a bit of butter on low heat and marshamallows…I used about two tablespoons of butter and then 3/4 of a bag of marshmallows.  Once they are melting pour in the food coloring and then melt the marshmallows down.  Once everything is melted, add in the rice cereal and start mixing it until it becomes the right consistency.  If you need a better color add some more food coloring.  Once you have the perfect color and consistency, take the color and spread it into the cake pan about 1 to 1 and 1/2 inches thick.  Now start the process over and build the next color.  Spread the next color over top of the first one and place in the fridge to cool.

Once the rainbow rice crispy treats layers are cooled, place them on a cookie sheet or somewhere safe and start making the next two layers.  This is the most important part, when you have the next two layers ready, add the first two layers back on top while the new ones are hot so they stick together and place them in the fridge.  If you do not add it when it’s hot they won’t bond and your rainbow rice crispy treats cake will break apart at the layers when you cut it.  Icing won’t even save it.  Now do this again one more time for the other two colors and you’re done.

To make the Kahlua icing and drizzle take a bit of the Kahlua and mix it with powdered sugar until it gets thick and then pour it onto the top of the rainbow rice crispy treats cake.   If you want it non alcoholic, use milk instead.  This cake is amazing for birthdays, pride festivals or even a fun dessert for the summer.  Thank you again for reading and don’t forget to share this post on your favorite social media site and buy an apron to support us.
