Baked Bruschetta Avocados – Easy & Amazing!

baked bruschetta avocadosI randomly came up with my recipe for Baked Bruschetta Avocados when I was looking through my fridge to make something for lunch.  I was actually going to make my zucchini pizza recipe when it hit me to add avocado to it.  Then when I took out the pit and saw a three cheese blend, I decided to go for it and make baked bruschetta avocados.  Not only did the baked bruschetta avocados come out amazing, I made them for my friend the next day and she dropped her fork.

How to make Baked Bruschetta Avocados.

avocado zuchinni pizzaMaking baked bruchetta avocados is super easy. They are perfect alternatives for baked potatoes and taste amazing with the garlic, basil and tomato. Here is my recipe for how to make baked bruschetta avocados.

What you need:

  • Basil
  • Garlic
  • 1 avocado half per person
  • Kumato tomatoes
  • Three cheese blend (Parmesan, Asiago, Mozzerella) or whatever you want, this is optional.

To make baked bruchetta avocados, preheat your oven to 425 degrees.  Place a piece of tin foil on a cookie sheet and then cut your avocados in half.  Take the pit out of the avocado and lay the halves on the cookie sheet.  Next chop 1 or 2 kumato tomatoes.  If you scoop out a larger area within the avocados than the pit, then you’ll need two, if you only use the pit area 1 tomato should work.  bruschetta avocadosPuree your garlic with the basil leaves in a food processor or chop it very finely and put it in a small bowl.  Add in a few pinches of your three cheese blend and the tomatoes and mix together.  Place the mixture in the scooped out area of the avocados and put in the oven for about 40 minutes.  Take them out and let them cool and you are done.  It’s that easy to make baked bruschetta avocados that everyone will love!  Don’t forget to share this on Twitter, Facebook and Pinterest and if you really enjoy it, please shop through the banner below that features a ton of really cool aprons without using a coupon.
