.The first thing to do is to get your ingredients together.  Here are 5 ways how to cook eggs in avocado for you to reference.  Take those ingredients first and then come back here for the rest.

  • 2 small red potatoes per nest
  • 1 clove of chopped or sliced Garlic
  • 1/2 of a red onion sliced thin
  • 1/4 cup extra virgin olive oil
  • 1 baking pan
  • aluminum foil

The trick with learning how to make egg and avocado birdnests for breakfasts is to make sure you know how to make a hasbrown.  Preheat your oven to 350 or 425 (cook for 25 minutes on 425 and 45 minutes on 350.  Next take your mandolin or grater and shred 1/2 of a medium red onion into a bowl with about 1/4 cup of extra virgin olive and two shredded red potatoes.  I like to spice these to match the egg and avocado recipe so with the ones above I included chili pepper powder, sea salt and black ground pepper.  Now combine in other flavors and the chopped garlic in a bowl.

Once combined in a bowl and properly mixed together, take the hasbrowns and build little nests on a baking sheet.

Now you can start baking these if you want them crispy for about 10 minutes or you can place the avocado and eggs in the nest and place it in the oven.  Using the 45 minutes at 350 will crisp them nicely so if you don’t want more work, that could be the easier solution.
