Now, here’s how to cook eggs in tomatoes as well as how I made my spicy pancetta eggs in tomatoes recipe. 

Recipe to Cook Eggs in a Tomato

Learning how to cook an egg in a tomato is actually a lot of fun.  I had a great time coming up with this recipe and it was insanely good to eat.  It’s also the perfect way to wake up your family in the morning because it smells incredible!

You will need:

  • 1 large tomato
  • 2 large eggs
  • 1 pinch of sea salt
  • 1 pinch of ground black pepper
  • 1/2 clove of Garlic
  • 1/4 of a red pepper chopped
  • 1 tablespoon of Pancetta or Prosciutto
  • 1 baking sheet

The first thing to do is to pre-heat your oven to 350.  Then lay out your baking sheet and make sure it is non stick.  Next slice the top off of your tomato and hull it out.  Once it is empty, try to make sure all of the juice or water is out.  I threw in the sea salt and pepper to help dry it out more.

Next, chop your garlic and then chop your red peppers.  Crack two large eggs into a glass or a bowl and hit your chili pepper powder shaker about 8 times into the eggs.  Now combine the rest of the ingredients and stir them in the cup or bowl.

Now you want to place the tomato on the baking sheet and then pour in the egg mixture.  The trick is to keep it level so that nothing spills out or over the top.  Even if something spills it won’t matter as long as the tomato is full.

Now place the eggs in the tomatoe into the oven for about 45 to 50 minutes.  I started mine for about 30 minutes on the middle shelf, then I moved it to the top shelf for the last 20.  The last twenty is when the egg actually started cooking.  To be safe, check every ten minutes or so to see how well the eggs are cooked/cooking.  Once you don’t see liquid on the top and it isn’t wobbly, chances are the eggs are cooked.  You’ll want to make sure though since eating raw eggs or any raw food is dangerous.

The last step is to take a spatula and carefully move the tomatoe to a plate, let it cool and then serve to your family.
