[Recipe] Prosciutto Wrapped Chicken & Sauteed Spinach Salad

Last night my friend whose served in Afghanistan and fought for our country came over for dinner.  Because he has done a lot for all of us, I wanted to make a special meal.  However, instead of my Korean BBQ short ribs (I didn’t have enough time to slow cook them) Hello Fresh had delivered a recipe for a prosciutto and sage wrapped Chicken breast with a roasted tomato and garlic spinach salad.

Although this recipe sound intimidating, it was incredibly delicious and seriously easy to make.  I did modify a couple things and below you’ll see what I did step-by-step with photos and instructions.  This is an amazing and easy meal to make. Prosciutto Wrapped Chicken & Roasted Spinach Salad Recipe

You will need:

  • 2 chicken breasts
  • 2 slices of prosciutto per person (I added 4 more to the shallot sauce)
  • 1/4 ounce of sage
  • 2 – 3 cloves of garlic (depending on taste)
  • 10 oz of regular spinach (not baby)
  • 2 roma tomatoes or 6 campari
  • 1 shallot
  • 1/4 cup of chicken broth or stock
  • 2 tablespoons of olive oil
  • sea salt
  • pepper

This sounds tricky but it is super easy.  Everything is made separately as a heads up.

Start by pre-heating your oven to 400 degrees and then spray a baking sheet with non stick spray.  Next season the chicken breasts with salt and pepper and then place two sage leaves across the top.  Now wrap the breast with two pieces of Prosciutto.  Place this in the oven for about 20 minutes or until it is cooked thoroughly.   Now it’s time to prep the other ingredients.

Slice the garlic cloves into thin slices.  Next slick or chop the sage.  Now do a fine mince on the shallot.  After you’ll want to cut the tomatoes into bite size pieces.

Now we’re going to make the sauteed garlic spinach and tomato salad.  Turn your stove onto medium and drizzle olive oil 1 tablespoon about into a large pan.  Once its hot, add your garlic slices and let them saute until fragrant or for about 2 minutes.  Now add in the spinach leaves and stir every 30 seconds.  You want the leaves to turn dark green and wilt.  I cover them to help speed this up and then stir or mix every 30 seconds.  Now add the tomatoes and salt and pepper to taste.  Let this cook for another 2 minutes mixing it every 30 seconds.  When it’s done, plate it.

Now we need to make the shallot and prosciutto sauce.  Take a large pan (you can reuse the one from the spinach) and add the other tablespoon of olive oil.  Once it’s hot, add the shallot and sage slices.  Let them get fragrant and now add in the 1/4 cup of chicken broth and pieces of prosciutto if you have more or want more.  My sauce didn’t thicken so I also added in a teaspoon to a tablespoon of flour.  This thickened it and made it even more amazing.  Now add salt and pepper to taste and remove it from the heat.

Now plate your chicken next to the sauteed garlic, spinach and tomato salad and then pour or place the shallot sauce over it with a spoon.  Now take a picture and get ready to enjoy an amazing and easy to make dinner.  Thank you again for reading and let me know how this recipe turns out for you.
