Creamy Peppercorn Crusted Steak

I challenged myself again this week and made something that was above and beyond incredible.  It was a filet with a creamy peppercorn and shallot sauce on it.  The steak was above restaurant quality and something anyone would love.  The best part is that it took less than 30 minutes and is insanely easy.  Here’s how to make it.  (as a heads up, I did get the recipe and box from Hello Fresh but no they did not give it to me free.  I paid and subscribe to their service.  Click that link to find a coupon code for $25 off.).

You will need:

  • 1 filet per person (this recipe is for two people)  I highly recommend you buy your steaks from this store.
  • 1 shallot
  • 1 oz of sour cream
  • 1/4 cup of beef broth1 tablespoon of black peppercorns
  • 1 tablespoon of butter
  • 1 – 2 tablespoons of extra virgin olive oil
  • sea salt
  • pepper
  • 1 tablespoon of all purpose flour

Get a medium size pan and place it on medium to high heat.  I used a 6 or 7 on my stove.  Now add the extra virgin olive oil to the pan.  While it’s heating, add the sea salt and pepper to all sides of the steaks.  You can see how much I added in the picture below.  While they cook, start doing a mince on the shallot.  You’ll also want to take the black peppercorn and crush them.  You can do this with a pan, I used a rolling pin since it was easier for me.

Once the steaks are cooked all the way through, or until they’re a safe temperature to eat and the way you like them, place them on a plate and let them rest.  While they’re resting, rinse out the pan (or leave it as is if you don’t have burnt olive oil) and add in the butter or more extra virgin olive oil.  Reduce the heat to medium at 5 and drop in the minced shallots.  keep stirring and tossing them for about 2 minutes or until they smell amazing and then reduce the heat to a 2 or 3.

Immediately pour in the 1/4 cup of beef broth and black peppercorns.  Now stir it occasionally until it is almost all evaporated.  Mine didn’t thicken after a few minutes so I also added a tablespoon of all purpose flour.  Once it’s thickened, add in the sour cream starting with 1/2 ounce and see how creamy it gets.

Now pour the sauce over the filets and get ready to eat some amazing food.
