Roasted Avocado, Butternut Squash, Potato & Chicken Recipe – Yum!

So I had nothing in the fridge except vegetables and chicken, garlic paste and an avocado. It was time for lunch, I didn’t feel like getting delivery so I decided to see what would happen if I would try roasting everything together. It’s hard to not roast something with garlic and not have it taste amazing, and this will definitely not disappoint you!

Here’s how to make roasted avocado, butternut squash and potato garlic chicken!

Garlic Roasted Avocado, Chicken and Vegetables Recipe

Ingredients:

  • Brusselsprouts
  • Butternut squash
  • Avocado
  • Chicken
  • Russet potato
  • Garlic or Garlic Paste
  • extra virgin olive oil
  • Sea salt
  • Ground black pepper

How to prepare:

Preheat your oven to 450 degrees.  Take a baking sheet and line it with aluminum foil (if you don’t want to risk damaging the sheet).

Now take a large mixing bowl and pour it a bunch of the extra virgin olive oil.  Add a few table spoons of salt and black pepper.  Throw in your chopped vegetables.  Chop your chicken into pieces and toss that in.  (I’ve been drinking wine so I’m cutting this post short).  Now mix add your chopped garlic or 1 tablespoon of garlic paste and mix everything together so that everything is covered in the mix.  (Quick note, do not put the avocado chunks in the bowl or it will smoosh).

Now pour all of the chopped foods onto the baking sheet and then run the remaining mixture over the avocado chunks.  Place the chunks on top of the other food and then place it in the oven for 45 minutes.

Take everything out of the oven and you’re done.  This recipe is pretty much impossible to mess up and tastes amazing.  If you do mess it up, there is much I can do for you except tell you to eat out.
